Lysozymes (muramidases) are a family of enzymes with antimicrobial activity characterized by the ability to damage the cell wall of bacteria (link). Lysozme is also one of the sweet-tasting proteins. The sweetness of lysozyme is however lost after incubation at 95 °C for 18 h, as proteins lose their structure (denature) and their action on our sweet taste buds (link).Regarding its positive charge, lysozyme has an isoelectric point (pI) of approximately 11.35. This means that at a pH below 11.35, lysozyme carries a net positive charge, which can influence its behavior in different environments. The positive charge can affect how lysozyme interacts with other molecules, including its ability to bind to negatively charged surfaces or particles.
